Chickpea Saute with Greek Yogurt is a tasty and healthy dish that tastes like it came from the Middle East. The sauted chickpeas are seasoned with fragrant herbs and come with a smooth Greek yogurt sauce. This is a healthy and filling meal. Ingredients: 1 can 15 oz chickpeas, drained and rinsed 2 tablespoons olive oil 1 small onion, finely chopped 2 cloves garlic, minced 1 teaspoon ground cumin 1/2 teaspoon ground coriander 1/2 teaspoon paprika Salt and pepper to taste 1 cup Greek yogurt 2 tablespoons fresh lemon juice 2 tablespoons fresh parsley, chopped 1 tablespoon tahini Optional toppings: cherry tomatoes, cucumber slices, olives Instructions: Warm up a big pan with olive oil over medium-low heat Add the chopped onion and garlic and cook for about three minutes, until the onion turns clear Add the paprika, salt, pepper, ground cumin, and ground coriander ...
