Chickpea Saute with Greek Yogurt



Chickpea Saute with Greek Yogurt is a tasty and healthy dish that tastes like it came from the Middle East. The sauted chickpeas are seasoned with fragrant herbs and come with a smooth Greek yogurt sauce. This is a healthy and filling meal.

Ingredients:

  • 1 can 15 oz chickpeas, drained and rinsed
  • 2 tablespoons olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground coriander
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • 1 cup Greek yogurt
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon tahini
  • Optional toppings: cherry tomatoes, cucumber slices, olives

Instructions:

Warm up a big pan with olive oil over medium-low heat

Add the chopped onion and garlic and cook for about three minutes, until the onion turns clear

Add the paprika, salt, pepper, ground cumin, and ground coriander and mix well

Add one to two more minutes of cooking until the food smells good

When you add the chickpeas to the pan, saut them for 5 to 7 minutes, or until they begin to turn golden brown

Put Greek yogurt, fresh lemon juice, and tahini in a different bowl and mix them together until the mixture is smooth

Put the chickpea saut in bowls, top with the Greek yogurt sauce, and sprinkle with fresh parsley that has been chopped

Cherry tomatoes, cucumber slices, and olives can be added as a garnish if you want to add more flavor and texture
