Pressure Cooker Sausage Black Beans and Rice
Using a pressure cooker to make a quick and tasty one-pot meal with smoked sausage, black beans, rice, and a mix of savory spices.
Ingredients:
- 1 lb smoked sausage, sliced
- 1 onion, diced
- 1 bell pepper, diced
- 2 cloves garlic, minced
- 1 cup black beans, soaked overnight
- 1 cup long-grain white rice
- 2 cups chicken broth
- 1 can 14 oz diced tomatoes, undrained
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1/2 teaspoon oregano
- Salt and pepper to taste
- Chopped fresh parsley for garnish
Instructions:
Set the pressure cooker to saut mode and cook the sliced sausage until browned
Remove excess grease if needed
Add diced onion, bell pepper, and minced garlic
Saut until vegetables are softened
Stir in soaked black beans, white rice, chicken broth, diced tomatoes with their juices, cumin, paprika, oregano, salt, and pepper
Close the pressure cooker lid and set to high pressure for 20 minutes
Once the cooking cycle is complete, allow natural pressure release for 10 minutes, then quick release any remaining pressure
Carefully open the lid, fluff the rice with a fork, and adjust seasoning if necessary
