Paleo Meyer Lemon Pudding Cake

Ingredients:
- 4 eggs
- 1/2 cup coconut flour
- 1/2 cup almond flour
- 1/2 cup honey
- 1/4 cup coconut oil, melted
- 1/4 cup Meyer lemon juice
- Zest of 2 Meyer lemons
- 1 cup coconut milk
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking soda
- Pinch of salt
Instructions:
Set the oven temperature to 175C 350F
Spread coconut oil on a baking dish
Eggs, honey, melted coconut oil, Meyer lemon juice, Meyer lemon zest, coconut milk, and vanilla extract should all be combined in a big bowl
Mix the almond flour, baking soda, coconut flour, and salt in a different bowl
Stirring constantly, gradually add the dry ingredients to the wet ingredients until smooth and well combined
